For those that have log countertops for a bar top or kitchen eating area. Is there a finish that is more heat resistant than others? I can only imagine the words that would float through a peaceful log home when someone puts a hot pan on it and it gets scalded/burned.

That hot pan will probably get the same bunch of words no matter how you finish your slab countertops. If this was 1975 and you were just installing Formica countertops, you'd have the same worry. The difference is that with your wood slabs it'll probably be easier to redo them than if it was Formica.
We will be using 3" or 4" slabs for all the counters in our home and we will probably distress them a bit and then oil them. Not set in stone yet but we like the idea and the look.

The best finish that will be Heat Resistant - concrete... about 2 inches worth...

I got good results using an epoxy on knotty pine. It shows no damage from hit cooking pots set on it, within reason, not as durable as 2-inch concrete but I like the knotty pine look. The epoxy had a thirty minute application time frame, it is self leveling, also a plus.

Our plan is to do both. A 10 inch slab for the breakfast bar and concrete by sink and stove.
