when i get my cabin built i want to build a real old fashioned smoke house behind it, i would like to build it out of logs as well in order to match the cabin, but heres the rub, i dont know anything about chinking will it withstand heat and to what temperature will it be good up to? a smoke house doesnt get real real hot but it does get to about 200 degrees maybe 250 if your in a hurry.

The smokehouse on my grandparents farm was built out of board and batten, worked fine for years and never had a problem. They sold the farm long ago but it's still standing and I know it was used for at least fifty years. Logs and chinking will hold up much better than that. Also, I don't have a lot of experience with smokehouses but I know theirs never got up to 200 degrees. They may have been using it more for flavoring than for full smoking, but I'm not 100% sure. Seems like with a smokehouse you smoke a lot longer and at lower temps than you do with a smoker that you buy in the store.
My parents' smokehouse is log chinked with wood chunks and rocks between the logs and mortar on each side (old style chinking). Been there at least 100 years.
