Without having taken the class, it would seem that a three story log home would cost less than a larger 1.5 or two story (smaller roof, easier to heat, smaller foundation, etc.). Is this the case? It appears to be more difficult to build three stories, but is it doable with the methods taught in the class?

Depending how much you spent on the logs, could be more or less.
We chose to do 2 stories with a loft since it was cheaper for us to go higher, but keep in mind, the higher you go the more dangerous it is working, & you better like heights.

When you have 3 or more stories you are also required to have two exits from from that 3rd story and each one above. This means multiple interior stairways or an interior and exterior stairway all the way to the 3rd floor.
A tall thin building can also have problems with the foundations being overloaded and have to have the size increased.
Old people have a hard time with stairs.
